Bean and Prosciutto Soup
June 2009
Serves 4-6
What you need:
- 1 can (420g) cannelloni beans, drained and rinsed
- 1 can (420g) butter beans, drained and rinsed
- 100g prosciutto (rindless), chopped
- 1Tbsp extra virgin olive oil
- 1 onion, roughly chopped
- 2 cloves garlic, finely chopped
- 1 red chilli, deseeded and finely chopped
- 2 small red capsicum, diced
- 250g pumpkin, sliced
- 6 cups chicken or vegetable stock
- 2tsp dried thyme
- Sea salt and cracked black pepper to taste
What you need to do:
Preheat oven to 180C. Place pumpkin on oven tray and roast for approximately 10-15 minutes or until tender. Place in a bowl and mash roughly. Set aside.
Combine the beans in a bowl. Mash approximately half the beans and set aside.
Place olive oil in a large saucepan over medium heat. Cook onion, garlic and chilli for ~2 minutes. Add capsicum, cook for another 2 minutes. Add prosciutto and thyme and cook for another 2-3 minutes. Add stock, mashed pumpkin, mashed and whole beans and bring to the boil. Reduce heat and simmer for ~15 minutes. Season to taste. Serve and enjoy.
