Sweet Summer Treats: Fruity Ice Blocks

Why head to the freezer at the supermarket when you can make your own delicious ice blocks? Get tropical with these frozen chunks of fruity wonder! These flavours are sure to be a hit with the kids – big and little – on these hot summer days. You can buy ice block moulds at most supermarkets and department stores.

Strawberry and banana ice blocks
Place 2 cups strawberry yoghurt, 1 mashed ripe banana and 1 tablespoon honey in a bowl and stir to combine. Pour into an ice block mould and freeze.

Mango ice blocks
Place the flesh from 3 mangoes, 2 tablespoons honey and 2 tablespoons lime juice in a blender and blitz until smooth. Pour into an ice block mould and freeze.

Pineapple and coconut ice blocks
Place 1 cup milk, ½ cup pineapple chunks, 1 tablespoon honey and ½ teaspoon coconut extract in a blender and blitz until smooth. Pour into an ice block mould and freeze.

Banana ice blocks
Place 1 cup milk, ¾ cup mashed ripe banana, 1 teaspoon vanilla extract and 1 tablespoon honey in a bowl and stir to combine. Pour into an ice block mould and freeze.

Berry and yoghurt
Place 1 cup fresh berries (raspberries and/or blueberries), 2 tablespoons honey, 2 cups plain greek yoghurt and juice of ½ small lemon in blender, blitz until combined. Spoon mixture into ice block mould and freeze.
