Sweet & Savoury Mashed Potato

- 6 medium sweet potatoes
- 1 tsp ground cumin
- ½ tsp cayenne
- 1 tsp salt
- ¼ cup pepitas (pumpkin seeds)
- Preheat the oven to 200 degrees. Place sweet potatoes on a pan with skins on, and bake for an hour or so until soft.
- Let sweet potatoes cool for 10 minutes before slipping off the skins. Transfer the sweet potato to a mixing bowl, then add spices and salt, and mash
with a masher (or fork) until smooth.
- Top with pepitas to serve. Store any leftovers in an airtight container in the fridge to reheat just before serving.
