Sweet & Savoury Mashed Potato

Satisfy sweet and savoury cravings with this cumin-spiced mashed potato. Full of fibre with a vitamin A boost, this side will help you feel fuller so you eat less. The cumin and cayenne will also give your digestive system a hand, while offering iron for energy and an immunity boost and unblocking your nose! The pepitas add a delicious crunch on top of the spiced sweet potato – at only 157 calories per serving, this wonderful side keeps well in airtight container for serving hot or cold the next day. Enjoy!

Ingredients

  • 6 medium sweet potatoes
  • 1 tsp ground cumin
  • ½ tsp cayenne
  • 1 tsp salt
  • ¼ cup pepitas (pumpkin seeds)

Method

  1. Preheat the oven to 200 degrees. Place sweet potatoes on a pan with skins on, and bake for an hour or so until soft.
  2. Let sweet potatoes cool for 10 minutes before slipping off the skins. Transfer the sweet potato to a mixing bowl, then add spices and salt, and mash with a masher (or fork) until smooth.
  3. Top with pepitas to serve. Store any leftovers in an airtight container in the fridge to reheat just before serving.
