Pumpkin Soup

Pumpkin soup is a classic winter dish

A healthy winter soup is always needed in winter and this Pumpkin soup packs a huge healthy punch. With Ginger, Turmeric and Garlic you can be sure you will be glowing with good health. Pumpkin is great for your heart and is packed full of vitamin C, perfect to help keep any winter colds away.


2 -inch Ginger

2-inch Turmeric

1 small Garlic clove

1 small Pumpkin diced

2 small Sweet Potatoes diced

1 tablespoon coconut oil

1L Vegetable Stock

1 medium size pot

Stick Blender


Heat the coconut oil in the pot, adding Ginger, Turmeric and Garlic.

Add Pumpkin, Sweet Potatoes and stir well, making sure all the ingredients are well combined.

On a high heat allow Pumpkin and Sweet Potatoes to fry for 2-3 minutes.

Add Vegetable stock to Pumpkin and sweet Potatoes, turning heat down to medium.

Allow to simmer for 30-35 minutes

Remove from heat and carefully blend well with a Stick blender

Return to heat and simmer again, for 5 minutes
