Protein Hit: Vanilla Almond Pancakes With Banana Cream

This scrumptious weekend breakfast recipe packs in almost 30 grams of protein per delicious 378 calorie serving! Protein in the morning is a must if you're trying to lose weight, because it offers you sustained energy to prevent the morning blahs from forcing you to reach for a high-sugar pick-me-up. You'll also have enough pep to get in an intense workout!

Pancake ingredients

3/4 cup whole wheat flour
85g vanilla protein powder
1 tablespoon baking powder
1/4 teaspoon salt
1 egg
1 tablespoon maple syrup
1/2 teaspoon almond extract
1 cup vanilla soy milk (or almond milk)
1 tablespoon canola oil
1/4 cup sliced almonds
Cooking spray for pan

Banana cream ingredients

1 banana
6 ounces low-fat vanilla Greek yogurt

To serve:

1/4 cup sliced almonds
1 banana


  1. Mix the whole wheat flour, protein powder, baking powder, salt, egg, maple syrup, and almond extract in a bowl.
  2. Stir in the soy milk and oil, and add the sliced almonds.
  3. Place a frying pan or griddle on medium heat. After spraying the pan, pour batter into circles (using about 1/4 cup of batter per circle).
  4. Once the pancakes begin to bubble, flip them, and cook for another minute or so on the other side until golden brown.
  5. To make the cream sauce, mash the banana in a small bowl, and stir in the Greek yogurt.
  6. Serve three pancakes with a healthy scoop of the banana cream sauce, and sprinkle with sliced almonds.

Makes 4 servings of 3 pancakes.
