Perfectly Paleo: Strawberries & Cream “Porridge”

Wednesday, September 2014

Let’s face it. At some point, most of us have eaten flavoured microwave instant porridge from a sachet and convinced ourselves that the combination of sugar and chemical and flavouring was doing our bodies a huge healthy favour. An easy mistake to make, but one that’s just as easy to avoid with this tasty paleo-friendly dish! Ditch that instant porridge sachet in favour of some serious flavour and nutritional value – this recipe cuts out the added sugar by including fresh fruit, and packs a protein punch by incorporating two eggs, and is super easy to quickly whip together as part of your morning routine!

  • 1 banana
  • 2 eggs
  • A dash of cinnamon
  • A splash of vanilla extract
  • 3 tablespoons canned coconut milk
  • 6-8 fresh strawberries, sliced
  • ½ tablespoon butter
  • Almond slivers or flakes to top with (optional)

  1. Mash the banana, eggs, and most of the strawberries in a bowl
  2. Mix 1 tablespoon of coconut milk, cinnamon, and vanilla into mixture
  3. Heat a frying pan on medium and grease with 1/2 tablespoon butter
  4. Pour mixture into the pan, and cook like scrambled eggs
  5. Top with remaining coconut milk, strawberries, and almond slivers (if using)
