Honeyed Winter Citrus with Yogurt

Citrus fruits are in season and full of juicy natural sweetness right now. At the tail end of a grey winter, a pile of glistening citrus segments makes for a very pretty picture – raid your local greengrocer’s aisles this week and brighten up your morning with a colourful medley of navel oranges, tangelos, blood oranges, grapefruit, and mandarins.

Honeyed Winter Citrus with Yogurt

Ingredients 

  • 3 cups of mixed fresh citrus slices (peel and pith removed)
  • ½ cup citrus juice
  • 3 strips of orange zest
  • 3 Tablespoons honey
  • 1 cardamom pod, lightly crushed
  • 1-inch piece of ginger, peeled and sliced
  • Yoghurt to serve

Method

  1. In a small saucepan combine the juice, zest, honey, cardamom, and ginger and bring to boil. Reduce heat, and simmer for 5 minutes.
  2. Strain the syrup, and add to your citrus slices - stirring to combine. Cover and refrigerate for at least an hour
  3. For a delicious and healthy breakfast or dessert, serve piled onto of your favourite plain yogurt.For an extra pop of colour, sprinkle with some pomegranate arils, chopped pistachio nuts, or fresh springs of mint.
  4. Honeyed citrus segments will last refrigerated for 3 days, so it’s an ideal one to make the night before.
