Healthy Mac and cheese
Mac and Cheese can be a family favourite in winter!
This Mac and Cheese recipe is simple to make and you can hide all sorts of veggie's in it. You can make it to your taste and dietary needs. It's great baked in small ramekins or one large baking dish.
Nonstick cooking spray
1 packet of past of elbow pasta
4 cups small fresh broccoli florets
2 3/4 cups low-fat milk
1/4 cup all-purpose flour
1/2 teaspoon salt plus a pinch
1/4 teaspoon garlic powder
1/4 teaspoon ground pepper, preferably white
1 cup shredded Gruyere
1/4 cup ounce grated Parmesan)
2 tablespoons bread crumbs
1 teaspoon extra-virgin olive oil
1 cup shredded cheese
1 tablespoon of cornflower
1 cup of milk
Mix in small pot on low heat and stir to melt lumps
Coat a large baking dish with cooking spray.
Preheat the oven to 180
In a large pot, cook pasta as per package instructions, adding fresh broccoli florets to pot cooking for 4 minutes before pasta is done.
Drain thoroughly and return pasta and broccoli to pot.
Whisk together 1/2 cup milk, flour, 1/2 teaspoon salt, garlic powder and pepper in a small bowl.
Heat remaining milk in a medium saucepan over medium heat until steaming but not simmering. Whisk flour mixture into milk and continue cooking, stirring often, until thickened and bubbling, about 4 minutes.
Remove from heat
Stir cheese sauce into pasta and cauliflower and transfer to prepared, baking dish.
Combine bread crumbs, oil and pinch of salt in a small bowl.
Top pasta and cheese with bread crumb mixture and bake until bubbling and golden, 22 to 25 minutes.
Let sit 10 minutes before serving.
