Healthy Blueberry Crumble

Have you noticed blueberries are coming down in price at the moment? Make the most of them while they’re on the shelves and treat yourself with this yummy dessert – if you need another excuse: just a half a cup of blueberries contains the same level of antioxidants as 2 ½ cups of spinach or 2 ¼ cups of broccoli!

This recipe is easy peasy lemon-squeezy – with the bonus of being delicious and gluten free!

Healthy Blueberry Crumble

  • 2 punnets fresh blueberries
  • Juice of 1 lemon
  • 1 cup almond flour
  • 1/2 cup slivered or flaked almonds
  • 1/4 cup coconut oil, melted
  • 2 Tblspoon maple syrup
  • 1 teaspoon cinnamon
  • 1/4 teaspoon of ground nutmeg
  • Pinch of sea salt
  1. Preheat the oven to 180c.
  2. Squeeze the lemon over the blueberries and stir through. Place the blueberries in an ovenproof dish, or you may choose to divide between six ramekin dishes if you prefer individual serves.
  3. Mix together the almond flour, almonds, coconut oil, maple syrup, cinnamon, nutmeg and salt. Spoon the crumble mixture over the blueberries, and bake for 30-35 minutes or until bubbly and golden brown.
  4. Perfect as they are, or serve with a dollop of yoghurt. Enjoy!
