Easy As (Pizza) Pie: Avocado and Egg Breakfast Pizza

3 words: Pizza. For. Breakfast. This concept is usually reserved for cold leftover slices the next day (and while some may argue that this is in fact the best way to enjoy pizza, let's face it: it's not exactly the most nutritious way to start your day), but we're loving this special avocado and egg breakfast combo! Invite the gang over for brunch and wow them with this deliciously simple breakfast pizza. Packed with omega-3s, protein and a dose of fibre, this zesty brekkie will keep you fuelled up for hours while taking care of any pesky AM pizza cravings that you might have!
Ingredients (makes 1 pizza)
- Wholemeal pita pocket
- 1 tbsp lemon juice
- 1 ripe avocado
- 1 egg
- Sea salt to taste
- Pepper to taste
- Chili flakes to taste
- Ground cumin to taste
- Cumin seed to taste
- Extra virgin olive oil to taste
- Toast pita pocket until crisp. If it won't fit in your toaster, place under a grill or in the oven on low for 3-5 minutes while keeping an eye on it.
- Cook egg to your liking. Fried is good, but if you're looking for a healthier yet equally delicious option, poach your egg!
- Mash the avocado and spread it on crisp pita. Drizzle with dash of fresh lemon juice, olive oil and spices to taste before serving.
