Crispy Zucchini Fritters with Chilli-Lime Dip

Add these deliciously zingy fritters to your kitchen repertoire! The chilli in the crispy fritters and the creamy ricotta dip offers an exciting kick, and the lime adds the perfect zing for your tastebuds. If you’re feeling like you deserve a treat, then substitute the ricotta in the dip for mayonnaise – we promise we won’t tell!


  • Vegetable oil for frying
  • 3 cups grated zucchini
  • 1 cup diced onion
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp pepper

For the chilli-lime dip

  • 1 cup ricotta cheese
  • Juice of half a lime
  • ½ tsp chili powder


  1. Pour vegetable oil into a skillet so it’s about 1.5 cm deep and turn the heat to medium.
  2. Mix zucchini, onion and eggs in a large bowl and stir to combine.
  3. In a separate mixing bowl, combine flour, baking powder, ½ tsp chilli powder, salt and pepper.
  4. Once stirred, add the dry ingredients to the zucchini mixture and fold together.
  5. Test the heat of the oil: dip a spoon in the batter, then dip it into the oil – if the oil bubbles on immediate contact with batter on spoon, it’s hot enough!
  6. Heap batter on to table spoon and drop into oil – try to fry no more than 6 fritters at a time. Cook 2-3 minutes each side. Once centres are firm, remove from oil and drain on paper towel.
  7. Combine the ricotta, lime juice and chilli powder in a small mixing bowl and stir.
  8. Serve fritters with chilli-lime dip and marvel at your cooking skills!

Makes 25-30 fritters.
