Berries are the fruit of summer! Blueberries are tiny sweet berries of goodness and are great fresh or frozen. They are highly nutritious and are a power house of antioxidants; you can enjoy them on their own or try baking with them.
This Blueberry bread is great for breakfast or midday snack !
1 cup blueberries (you can use any berry)
2 tbsp RAW honey
2 ripe bananas mashed
1 tbsp vanilla extract
1 tbsp apple cider vinegar
2 cups almond flour/meal
1 tbsp cinnamon
1 tsp baking soda
Coconut oil spray
Preheat oven to 180 degrees.
Spray bread pans with coconut oil spray and set aside.
Mix dry ingredients together well: almond meal, cinnamon and baking soda.
Mix wet ingredients together well: honey, vanilla extract, apple cider vinegar, and eggs.
Add wet ingredients to dry ingredients; make sure these are well incorporated.
Fold in blueberries and bananas to the mixture.
Divide batter and pour it into the two mini bread pans or muffin trays if you prefer. Bake for about 35 minutes (or until it passes the toothpick test).
Let bread cool. Once cooled, cover it with plastic wrap and place in refrigerator overnight.
