Berry, Cacao and Coconut Milk Smoothie

Struggling to come up with imaginative and healthy breakfasts that don't take hours to prepare? Try this amazing (and easy peasy) berry, cacao and coconut milk smoothie. We're a little obsessed with it this week!
If you're finding the coconut milk too rich for your liking, you can easily substitute it for soy milk, or skim milk even. For an extra special (and cute!) breakfast, feel free to top this colourful smoothie with a sprinkling of white chia or shredded coconut.
- 3/4 cup light coconut milk (can be substituted for soy, almond or skim milk)
- 2 tablespoons chia seeds
- 1 scant teaspoon raw cacao powder (not to be confused with cocoa powder!)
large handful of mixed frozen berries, thawed (using berries from frozen results in a thicker drink that you may need to eat with a spoon instead of drink!)
- 1 tablespoon shredded coconut or 1 teaspoon white chia seeds to serve
Combine all ingredients in blender until smooth. Blend in a handful of ice for a cooler drink. Pour into glasses to serve and sprinkle with shredded coconut or white chia seeds if desired. Done!
